Our Cheese

Like so many of the farmstead cheeses, ours are made the old fashioned way. With our own milk, in small batches, by hand, with no additives. Due to the nature of Guensey milk, especially during the spring and summer months, our cheese needs no coloring. Guernsey cows naturally accumulate high levels of vitamin A and Beta Carotene, which imparts the beautiful coloring. 

Newaukum Hill

Our signature, Gouda-style, raw milk cheese with an oiled rind. Mild when young, and akin to a grana when aged.
Sold young, or aged two years and older. Wheels (12 lb.), wedges or grated. 

Traditional Cheddar

This is a traditional cheddar made with raw milk. It is available either with an oiled rind or  a bandaged/brushed rind. 
Sold mild or sharp, by the wheel(17 lb.) or wedge.

Saint Isidore

Akin to a tomme, this is a raw cows milk cheese with an oiled rind. 
Sold young or old, by the wedge or wheel (12 lb.). ​

Specialty Saint Isidore

This was a special request from a friend who asked for a cheese that reminded him of one from his childhood in "the Old Country." Although smaller, it is a Saint Isidore with a natural brushed rind. It is available in wheels (6 lb.) or wedges. 

Seasonal, Spiced Goudas

These are a Gouda-style cheese made from raw milk with oiled rinds. Check in often to see what we are producing seasonally. Some of our flavors include, Nettle/Garlic, Cumin, and Fennel/Carraway.

Bella's Feta

For most, feta is synonymous with goat cheese, but did you know that most of the feta consumed in our country is actually made from cow's milk? You'll love Bella's feta, which comes raw or pastuerized in plain 1 lb. blocks, or in a 1 pint marinade.
